Tropical Coconut & Seed Cookies
Coconut Flour – 1 ¾ cups
Baking Powder – 2 tsp
Salt – 1 tsp
Baking Soda – 2 tsp
Dried Fruit (Mango & Pineapple) – 1 cup
Rolled Oats – 1 cup
Almonds (Sliced/Slivered) – ½ cup
Coconut (flaked/toasted) – ½ cup
Sesame Seeds – ¼ cup
Sunflower Seeds – ½ cup
Flax Seeds – 1 cup
Pumpkin Seeds – ½ cup
Poppy Seeds – ½ cup
Brown Sugar – 2 cups
Margarine/Butter – 1 cup
Honey – 1 tbsp
Eggs – 3
Vanilla – 1 tsp
Preheat Oven 350°F
BOWL # 1
Mix Coconut flour, baking powder, salt, baking soda, dried fruit, rolled oats, coconut, sesame seeds, sunflower seeds, flax seeds, pumpkin seeds, poppy seeds.
BOWL # 2
Cream together the brown sugar, butter/margarine, and honey. Adds eggs one at a time, and finally add vanilla.
Slowly add the dry ingredients from bowl 1 to bowl 2. Mix fully after each addition until all ingredients are incorporated.
Use a tablespoon to roll dough into balls, place on cookie sheet and flatten with fork.
Bake for 10-12 minutes. Until golden brown.
Let cool on cookie sheet for a few minutes before transferring to a cooling rack to cool completely. Then store in an airtight container.
