Turkey Shepards Pie

 

A lighter version of the traditional comfort food.

 

Ingredients

 

Meat & Veggie Mixture

Onions (chopped) – 1 cup

Carrots (chopped) – 1 cup

Celery (chopped) – 1cup

Ground Turkey – 1 lb

Garlic (smashed) – 2 cloves

Zucchini (finely chopped) – 2 cups

Red Pepper – 1 cup

Chicken Broth – 1 cup

Thyme – 2 tsp

Pepper – 2 tsp

Soya Sauce (Light) – 1 tbsp

Worsterschire Sauce – 1 tbsp

Salt – to taste

Flour – 2 tsp

Frozen Peas – 1 cup

 

Cauliflower & Potato Topping

Cauliflower – 1 head

Sweet Potato – 2 cups

Yellow Potato – 1 cup

Butter – 2 tsp

Sea salt – 1 tsp

Milk – ½ cup

 

Preheat oven 350°F

 

In the Skillet

Lightly coat a skillet with oil. Place on medium heat and sweat the onions, carrots, and celery about 5 minutes. Add the ground turkey, pepper, thyme, and a pinch of salt. Let it brown about 5-7 minutes add the zucchini, red pepper, chicken broth, soya sauce, and Worcestershire sauce. Add the flour and cook 5 minutes, lastly add the green peas.

 

In the Pot

Place the cauliflower, sweet potato, and yellow potato in a pot (they should be cut in about equal sizes for even cooking). Fill with water just to cover the veggies. Bring to a boil, let boil a few minutes. Check with a fork, when it slides easily through strain out the water. Mash together, add the butter, milk, cheese and salt, mix until smooth.

 

In the Oven

In an oven safe dish, place the turkey mixture from the skillet in the bottom. Spread it evenly then cover with the light and fluffy cauliflower and potato mixture. Place in the oven and bake for 20-30 minutes.

 

Ready to serve, or let cool, cover tightly, refrigerate, and serve later.
