Chili Lime Chicken Salad

 

INSTRUCTIONS :

 

CHICKEN PREPARATION :

Preheat oven to 375°F

Season 2-3 Chicken Breasts with 1 clove crushed garlic, 2 tbsp olive oil, 2 tsp bbq sauce, 1 tbsp chili powder, 1 tsp cayenne, 1 tsp onion salt, zest and juice of two limes, pinch of salt and pepper. Whisk together and cover chicken breasts.

In an oven safe dish pour ¼ cup chicken broth. Place seasoned chicken breast in dish and cover with lid or foil. Bake between 40 – 45 minutes. Remove from oven and let cool. Once cool cut into cubes or slices.

 

GREEN YOGURT & AVOCADO DRESSING :

In a bowl mix 1 cup Greek Yogurt with 1 cup soft Avocado. Add the zest and juice of 1 lime, 1 tbsp extra virgin olive oil, 2 tsp chili powder, and a pinch of salt and pepper. Whisk everything together evenly, and taste.

 

SALAD ASSEMBLY :

 

Get a 1L mason jar

 

LAYER # 1 :

 ½ – 1 tbsp ranch dressing or Greek yoghurt and avocado dressing

 

LAYER # 2 :

1 tbsp salsa

 

LAYER # 3

Thumb size portion of old cheddar cheese (grated)         

 

LAYER # 4 :

1 tbsp small diced red onion

 

LAYER # 5 :

4 – 5 cubes/slices chicken                   

 

LAYER # 6 :

½ cup Mixed Beans (Kidney, Chickpeas, Black Beans) rinsed

 

LAYER # 7 :

½ cup Mixed peppers of choice (Red, green, yellow, orange, etc.)

 

LAYER # 8 :

2 tbsp sliced black olives

 

LAYER # 9 :

Fill Remainder of Jar with Leafy Greens.

 

Seal tightly with lid and refrigerate. To enjoy, flip upside down and empty contents into a bowl. You may want to serve with a slice of fresh avocado sprinkled with a little sea salt.
