INSTRUCTIONS : Honey Garlic Sauce
Preheat oven to 375°F
Honey Garlic Sauce: In a sauce pan combine ¼ cup packed brown sugar, 1 tbsp corn starch, begin to heat. Add ¾ cups water, 2 tbsp low sodium soy sauce, 2 tbsp honey, 4 cloves crushed garlic. Bring to a boil stirring constantly. Remove from heat.
In an oven safe dish pour ½ cup chicken broth. Place 2-3 chicken breasts seasoned with a pinch of salt and pepper. Pour honey garlic sauce over chicken, cover with lid or foil and bake for 40 – 50 minutes. Remove from oven, sprinkle with some sesame seeds, let sit covered for 10 mins then remove cover and let cool. Cut into cubes, or slices.
Get a 1L mason jar
Layer ONE: ½ – 1 tbsp sesame dressing
Layer TWO: 1-2 tbsp cashew nuts
Layer THREE: 2 tbsp small diced red onion
Layer FOUR: 5-6 black berries (only when seasonal)
Layer FIVE: 5-6 cubes or slices of the chicken
Layer SIX: ¼ – ½ cup grated carrots
Layer SEVEN: ¼ cup snow peas or sugar snap peas (cut in half)
Layer EIGHT: ¼ cup red pepper
Layer NINE: ½ cup finely chopped purple cabbage
Layer TEN: Fill remainder of jar with romaine lettuce or mixed greens
Seal tightly with lid, and refrigerate. When time to enjoy turn jar upside down, and pour contents into a bowl. May need to use a fork to help get all the ingredients out.
Special note: Can substitute Chicken for a protein of choice, or omit all together.
