Brussel Sprout Bake

Ingredients:
Brussel Sprouts (quartered) – 4 cups
Sweet Potato (cut into small cubes) – 1 large (about 2 cups)
Purple Yam (cut into small cubes) – 1 Large (about 2 cups)
Red Onion (diced) – 1 large (about 1 cups)
Extra Virgin Olive Oil – 2 tbsp
Balsamic Vinaigrette – 3 tbsp
Salt & Pepper – a pinch

 

Cooking Instructions : 

Preheat Oven 365°F

In an oven safe dish spread out all veggies, and evenly distribute the olive oil, vinaigrette, salt, and pepper. Place in oven and let cook between 50 – 60 minutes. Halfway through cooking stir the veggies around to ensure veggies cook evenly.

Serve with grain of choice such as Quinoa and Barley. Also serve with a protein of choice such as beans or chicken or why not both!
