Berries, Beets, Barley & Citrus Salad

This is a fun fresh and filling healthy salad. With the smoothness of soft cheese and a hint of sweetness you'll feel guilty calling this salad healthy … but it is … enjoy 🙂

INGREDIENTS : 

– 2 WHOLE BEETS (CUBED INTO SMALL PIECES)

– 1 PINCH OF SEA SALT

– 1 TABLESPOON OF OLIVE OIL

– 1 CUP OF BARLEY (TOASTED)

– 1 WHOLE ORANGE (JUICE AND ZEST OF)

– 1 TABLESPOON HONEY

– 1 CUP OLIVE OIL (EXTRA VIRGIN)

– 1/2 CUP BALSAMIC VINAIGRETTE

– 1 PINCH SEA SALT

– 1 PINCH BLACK PEPPER

– 1 PORTION GOAT OF FETA CHEESE (THUMB SIZED PORTION)

– 1 CUP RED ONION

– 4 SLICES ORANGE

– 5 STRAWBERRIES (SLICED)

– 1/2 CUP BEETS (COOKED)

– 1/4 CUP BARLEY (COOKED & COOLED)

– 1 TABLESPOON ALMONDS (TOASTED & SLICED)

– 1 HANDFUL MIXED GREENS (SPRING MIX)

– 1/4 CUP NAVY BEANS

INSTRUCTIONS : 

 

Preheat oven 350°F

Cut 1-2 beets into small cubes, place in a oven safe dish with a pinch of sea salt, and tsp of olive oil.

Cover with lid or foil, and bake between 45 – 50 minutes. Beets are cooked fully when a fork slides in easily. Remove from oven and set aside to cool.

In a pan on medium heat lightly toast 1 cup barley.

In a small sauce pan bring 2 cups of water to a boil. Once water is boiling add the lightly toasted barley with a pinch of salt.

Cover with lid and reduce heat to simmer. Check after 2 minutes, stir and when returning lid leave it ajar so some steam can escape.

Turn off heat and let barley absorb liquid and fluff up.

For dressing choose your favorite balsamic vinaigrette or make or your own. I recommend; Mango & Garlic, Fig, or Orange.

 

*To make orange dressing:

In a bowl whisk together the juice and zest of one orange,1 tbsp honey with ½ cup extra virgin olive oil, ½ cup balsamic vinaigrette, and a pinch of salt and pepper.

 

Grab 4-6 1L mason jars

LAYER ONE : 1tbsp dressing

LAYER TWO : 1 thumb sized portion of goat’s cheese or feta cheese

LAYER THREE : 3-4 slices of Orange & 4-5 slices of strawberry

LAYER FOUR : 1 tbsp red onion

LAYER FIVE : ½ cup the cooked beets

LAYER SIX : ¼ cup navy beans

LAYER SEVEN : ¼ cup cooked barley (cooled)

LAYER EIGHT : 1 tbsp toasted almonds

LAYER NINE : Fill remainder of jar with mixed greens

 

Seal tightly with lid and refrigerate.
